Hey ya’ll,

I have no cool picture of the yummy casserole I made last night because it wasn’t very photogenic, but it sure was tasty!  I figured I’d share what I concocted…

I had leftover roast chicken and mashed ‘taters to work with…

I sauteed onion, garlic, and red pepper with a little bit of chopped chilies in adobe sauce…added the picked chicken and some Sweet Baby Ray’s BBQ sauce…put in a casserole dish….and topped with…. ’taters… that I warmed up and thinned  a bit with some sour cream…added some cheddar cheese (inside and on top) and baked until bubbly.

It was awesome!
